Chicken Enchiladas

I haven’t tried this recipe yet but it is on my list of things to cook plus if the family likes it I can make ahead and freeze.  Also, you can’t really go wrong with Ree Drmmond’s recipes.

Szechuan & Kale Salmon Patties

These round little patties aren’t your most healthy of dinner choices but they could be worse. I have a hungry boys and a husband and they gave these a thumbs up! 

We have all had salmon patties at some point in our childhood.  Well,  I just kicked them up a notch!  Szechuan & Kale Salmon Patties!

Again, for full recipe disclosure,  I’m not a measurer ~ I’m an eyeball’r of ingredients so here is what I mixed up. 

Two cans of Salmon, 4 eggs,  a little salt, a sleeve of hand crushed saltine crackers (not whole30 approved!), a teaspoon of szechuan (that I did measure!), and a few leaves of kale (spinach would have worked, too) .  Tip: I would not use frozen kale or spinach because I’m sure the water would make the oil pop. 

I mixed well and formed into patties. Some people at this point roll them in flower,  I do not.  Fry in a little oil on medium heat for a few minutes on each side and they are ready to eat! 

This also gave me a reason to show off my new pretty Pioneer Woman’s cooking dish!

Healthy Breakfast Peppers

A little over a month ago I set out on the journey to eat healthier. What I found out quickly is when you take the time to prep your food for the week it isn’t that hard to accomplish. Breakfast and lunch are my downfalls. Here is my attempt to prep breakfast for the week.  I have other recipes but this one was a keeper. 

Here is a picture of breakfast peppers I threw together. I chopped up mushrooms,  tomatoes, a handful of frozen spinach and two eggs.  I’m not a measure’r, I’m more of an eyeballe’r! So,  I don’t have exact amounts. 

I microwaved (trial and error, baking in the oven took too long and didn’t cook the center) between 7 and 10 minutes.

Turkey Bacon would be great on it, well not as great as real bacon!
