Szechuan & Kale Salmon Patties


These round little patties aren’t your most healthy of dinner choices but they could be worse. I have a hungry boys and a husband and they gave these a thumbs up! 

We have all had salmon patties at some point in our childhood.  Well,  I just kicked them up a notch!  Szechuan & Kale Salmon Patties!

Again, for full recipe disclosure,  I’m not a measurer ~ I’m an eyeball’r of ingredients so here is what I mixed up. 

Two cans of Salmon, 4 eggs,  a little salt, a sleeve of hand crushed saltine crackers (not whole30 approved!), a teaspoon of szechuan (that I did measure!), and a few leaves of kale (spinach would have worked, too) .  Tip: I would not use frozen kale or spinach because I’m sure the water would make the oil pop. 

I mixed well and formed into patties. Some people at this point roll them in flower,  I do not.  Fry in a little oil on medium heat for a few minutes on each side and they are ready to eat! 

This also gave me a reason to show off my new pretty Pioneer Woman’s cooking dish!

Healthy Breakfast Peppers


A little over a month ago I set out on the journey to eat healthier. What I found out quickly is when you take the time to prep your food for the week it isn’t that hard to accomplish. Breakfast and lunch are my downfalls. Here is my attempt to prep breakfast for the week.  I have other recipes but this one was a keeper. 

Here is a picture of breakfast peppers I threw together. I chopped up mushrooms,  tomatoes, a handful of frozen spinach and two eggs.  I’m not a measure’r, I’m more of an eyeballe’r! So,  I don’t have exact amounts. 

I microwaved (trial and error, baking in the oven took too long and didn’t cook the center) between 7 and 10 minutes.

Turkey Bacon would be great on it, well not as great as real bacon!

Cooking With Bacon Grease…


Something I have learned the past week while trying to organize my home and thus my family’s lives is they don’t want to be organized. I am attempting to rewrite DNA here. Why do they fight what is good for them? It is just not trying to get our lives organized but also the older we get the more healthy recipes I am making for my family, and again getting them to actually go back for seconds is a chore. Why is it we are hardwired for the things that aren’t good for us? Going to a biblical verse Jesus said it best when he spoke these words in Mark 10:18 NIV, “Why do you call me good?” Jesus answered. “No one is good–except God alone.”

Actual conversation this morning between my husband and myself:

Me, the loving wife trying to promote heart health asked my husband, “Would you like me to cook breakfast?”

He answered, “Yes, but be sure to cook the eggs in the bacon grease this time.”

I quickly answered, “Noooo.”

He quips, “I don’t have high cholesterol.” Like that justifies him eating pig fat.

I smiled as I left the room and mumbled, “You are welcome.”

We all have that *something* that we know we should do because it is good for us and when we make it a routine of doing the right thing, for me right now it is getting my home re-organized this week. It would be easier to just let it be and continue in the familiar routine that I know. We fight what is good for us, we don’t always see the bigger plan. We go for what is easiest at the time. God has a grand plan for us, He wants what is good for us and we don’t always listen and it may not always be the easy way at the time but in the long run it always winds up being the right route. Many of us run and hide from His goodness and miss out on blessings that God wants us to have.

Galatians 6:9 ESV
“And let us not grow weary of doing good, for in due season we will reap, if we do not give up.”

I will not give up this fight, I will win and by-golly my family will be happy about it! Or at least appease my good effort 🙂

Is there something you have been fighting getting done around the house? Set a timer for 15 minutes and only do it for 15 minutes. It doesn’t have to be done perfect, it DOES NOT ALL have to be done today- JUST DO IT.

Game Day Food and Wrongful Cheering?



I jut learned that Alton Brown of the Food Network has a YouTube Channel! Why would I get excited about this you ask? Because he is awesome! He has posted a video of Game Day Foods and with the season of the covered Pig Skin upon us I thought I would pass on my new found YouTube Channel to you!

I have to be honest,I am not one of those football moms that understands the game. In fact I only know to cheer if my son catches the ball, our team makes a touchdown, or takes down the opposing team ball carrier. If I was going to be completely honest, I mostly follow the lead when the our team cheers and I cheer right along! I may not understand what just happened but if the other moms are hollering, I holler too! (Unlike baseball- I GET BASEBALL!) Now, you may be thinking that I am a newbie to the game. NOT THE CASE! I wish I could use that as an excuse. I even have the book Football For Dummies ;( What is beneath a dummy because I would fall into that with the game of football.

HOWEVER, I can cook. SO~~ I may cheer at the wrong times and when the other team runs a very long distance I do want to cheer for their accomplishment. You know, give credit where credit is due. I may possibly get dirty looks for this~~ I don’t care. I know that when I make a great dinner, or a great after the game snack, I win. My football follies are forgotten! Alton Brown just helped a little more with this. My football playbook has game day recipes in it!

A game day picture from last weeks game. He is the one on the end closest to us and ready for a play! He may be a Receiver or possibly a Corner? Not sure what is going on here! What matters is I cheered and cooked after the game. It is how I roll.
