Szechuan & Kale Salmon Patties

These round little patties aren’t your most healthy of dinner choices but they could be worse. I have a hungry boys and a husband and they gave these a thumbs up! 

We have all had salmon patties at some point in our childhood.  Well,  I just kicked them up a notch!  Szechuan & Kale Salmon Patties!

Again, for full recipe disclosure,  I’m not a measurer ~ I’m an eyeball’r of ingredients so here is what I mixed up. 

Two cans of Salmon, 4 eggs,  a little salt, a sleeve of hand crushed saltine crackers (not whole30 approved!), a teaspoon of szechuan (that I did measure!), and a few leaves of kale (spinach would have worked, too) .  Tip: I would not use frozen kale or spinach because I’m sure the water would make the oil pop. 

I mixed well and formed into patties. Some people at this point roll them in flower,  I do not.  Fry in a little oil on medium heat for a few minutes on each side and they are ready to eat! 

This also gave me a reason to show off my new pretty Pioneer Woman’s cooking dish!
